I wasn't a big fan of ampalaya when I was a child and even long after my childhood days were gone. Yes because it is bitter. And I don't like the bitter aftertaste it leaves in my mouth... until I have tried my cousin's ampalaya con carne. It wasn't as bitter as it used to be, though I still tasted some bitterness. Nonetheless, I've learned to like ampalaya from then on. But just recently, I've learned what will remove the bitterness all in all.
Ingredients:
garlic
onion
tomatoes
ground pork
eggs
ampalaya
water
salt and pepper to taste
The secret: after cutting the ampalaya, rub it with salt. Then, let it soak in water for at least 30 minutes.
Sautee garlic, onion and tomatoes. Add the ground pork. Once the ground pork is cooked, add the eggs. Pour a little water then add salt and pepper to taste. Add the ampalaya. Let it simmer. Don't mix the ingredients once the ampalaya has been included. Not mixing it helps in minimizing the bitter taste of the ampalaya.. Just cover it and let the ampalaya cook on its own for a few minutes.
So easy to cook, right? And it's all worth trying it, especially if you have a sweet tooth like me. We need something like the ampalaya to balance out the sweets we all love munching on.
